Tea Sandwich Filling Recipe - Chicken Salad

Makes 12 - 16 tea sandwiches

2 cups of finely chopped roasted chicken

1/2 cup of mayonnaise (Duke's if available)

1 tablespoon of sweet pickle relish

1 teaspoon of finely chopped onion (optional)

1/4 teaspoon of white sugar (optional)

1/8 teaspoon of salt

1/8 teaspoon of pepper

Add all ingredients to a mixing bowl. Mix well. Taste.

Add mayonnaise to increase creaminess.

To make tea sandwich, spread 1/4 inch layer of filling on a slice of lightly toasted honey wheat bread. Place another slice of bread on top of the filling. Trim the crust. Cut sandwich into three or four smaller (tea-sized) sandwiches.

Tips for a nice tea sandwich experience:

Keep the filling light in flavor so that it doesn't compete with the tea you are serving.

Keep the filling finely chopped and manageable so that it can be eaten easily and neatly.

Remove gloves.

PIck up the sandwich with your index finger and index finger.

Consume the sandwich within 2 or 3 bites.

Sip from your tea cup between bites of sandwich.
